Es Muy Bueno!

So, I’ve already established the fact that I can’t cook, right? However, what I probably should have said was, as long as I can read I can cook, meaning I can read a recipe.

Okay, let me be honest and tell you that even when I follow the recipe sometimes my meals don’t come out quite right, but there is a recipe I’ve managed to perfect and I want to share it with you today.

Mexican Lasagna

1 lb of ground meat ( I use dark ground turkey from Wholefoods)

1 can of black beans

1 red onion

1 red bell pepper

1 package of your favorite taco seasoning (I use two)

16 oz of your favorite taco sauce (more if you want it to be saucy)

10 flour tortillas

2 cups of shredded cheese

After you brown your ground meat, add the black beans, chopped onion and red bell pepper. Cook until veggies are slightly tender then add the taco seasoning and mix well. I usually cook until the seasoning in well blended into the mixture. Pour some of the taco sauce on the bottom of a casserole pan, enough to cover the bottom then place five tortillas on top of the sauce. Pour sauce on top of the tortillas then add half of the meat mixture followed by one cup of cheese. Repeat step one. The meat mixture should be the final layer. Bake for about 15 to 20 minutes. Es muy bueno. Enjoy!
